I’m not sure why I’m just now creating this recipe ~ as Spanish style rice is my weakness. But I almost never have it because most recipes have chicken stock or loads of sodium. And with living in the van, it’s always been difficult to make rice as it uses a TON of propane which can be expensive. But recently my mother in law gifted us with a rice cooker! MY SAVIOR!
This recipe is SO SIMPLE. Seriously, all you have to do is prep your ingredients, stick in all in your rice cooker, and enjoy.
I decided to use Quinoa here as it’s one of my FAVORITE foods. Quinoa is high in protein, fiber, antioxidants, vitamins, and minerals, and is one of the only plant foods that contain all 9 amino acids!! Talk about one SUPERfood! Although quinoa cooks like a grain, it is actually a seed, which makes it naturally gluten free. It is alos low on the glycemic index, so it is a great food for people with issues with their blood sugar (though keep in mind it is also high in carbs). PLUS Quinoa can help you lose weight! It’s high fiber content helps you to feel full faster and longer, it’s high protein content has been shown to boost metabolism ~ making it a great addition to any meal!
Rice Cooker Spanish Style Quinoa
- 1 C Water
- 1 C veggie broth, no salt added
- 2 C Quinoa
- 1/2 C chopped cherry tomatoes
- 1 Onion, diced
- 1/4 C diced green chilies
- 1/8 C cilantro (optional)
- 1 TBSP + 1/4 TSP Chili Powder
- 1/4 TSP Pink Salt
- 1 TSP Cumin
- 1 TSP Turmeric
- 1/2 TSP Garlic
- Juice from half of one lime
- Get your rice cooker ready!
- Prep all your veggies.
- Add all of your ingredients into your rice cooker dish EXCEPT the lime juice, water, and veggie broth
- Stir ingredients well.
- Add Water and Veggies broth. DO NOT STIR.
- Cover and hit “cook” on your rice cooker (KEEP YOUR EYE ON YOUR QUINOA AS RICE COOKERS VARY, IF AT ANY POINT IT SEEMS TOO DRY ADD MORE WATER)
- When finished, squeeze your lime juice in and stir
