NEW Recipe: Cheezy Turmeric Cauli-Mash

A option for the days you are just CRAVING some mashed potatoes, but are trying to stay low carb. It’s amazing the things you can do with cauliflower ~ make rice, buffalo wings, taco meat, and for this recipe we mash it up to make a delicious cauli-mash!

Let’s begin with the wonderful health benefits of cauliflower! It has been shown to improve blood pressure and kidney function, it contains anti-inflammatories, it’s an amazing source of vitamin C (77% of your daily value in ONE serving!!), boosts brain health, PLUS – when cauliflower is combined with curcumin, it has shown to help prevent and treat prostate cancer!!  And for this recipe – we combined cauliflower with turmeric, which contains curcumin! WIN-WIN!

Not to mention some added nutritional yeast of some extra body love! Nutritional yeast is a complete protein, it contains 18 amino acids ~ 9 of which are essential for your body that it can’t produce! It’s a wonderful source of protein, fiber, B vitamins, and minerals. Because of it’s natural cheesy flavor, it’s used by most vegans and people on the paleo diet as a replacement to cheese!

Last but not least we throw in some garlic, thyme, salt and pepper to finish off the wonderful flavors. Use this recipe as a side or even a main dish depending on how hungry you are! This is so tasty your family won’t even know it’s not potatoes! (;

Cheezy Turmeric Cauli-Mash

Serves: 2

Ingredients:

  • 1 Head Cauliflower, Stem Removed and Chopped
  • 2 Cloves Garlic, Minced
  • 1/2 TSP Turmeric
  • 1 TSP Thyme
  • 1/4 TSP Pink Himalayan Salt
  • 1/4 TSP Black Pepper
  • 2 TBSP Nutritional Yeast
  • 1 TBSP Avocado Oil
  • 1/4 C Unsweetened Almond Milk

Directions:

  1. Steam cauliflower for 7 minutes or until tender.
  2. Place steamed cauliflower between two paper towels for a minute to dry
  3. Transfer cauliflower to food processor
  4. Add all ingredients to food processor
  5. Blend until smooth and creamy, scraping down the sides as necessary
  6. Add more salt or pepper to taste (I personally added more pepper!)
  7. Garnish with chives or fresh thyme!
  8. Enjoy!
