This is one of my ALL TIME favorite recipes! And what’s crazy is, there was a time when I hated sweet potatoes. But then I started to mess around with different recipes and eventually started to OBSESS over them. So if you’re like me and can’t stand them now, don’t give up just yet!
While they sometimes get a bad rap because they live in the potato family, sweet potatoes actually hold many health benefits. They contain a plethora of antioxidants and anti-inflammatory’s, they can improve your blood sugar regulation, and are an excellent source of vitamins! Including, but not limited too, vitamin A, vitamin C, magnesium, copper, vitamin B6, potassium, and niacin.
So don’t wait until Thanksgiving to include these into your life, start sprinkling them into your weekly diet now! In most country’s they’re available year round (although in peak season late October – December)!! Craving a burger & fries? These sweet potato fries will satisfy your cravings without having to load up on unhealthy fats and sodium, talk about a win-win! Serve ’em up with a side of sriracha and you’ve got yourself some sweet and spicy goodness!
SWEET POTATO FRIES
INGREDIENTS: Serves 2
- 1 Large Sweet Potato
- 1/2 TSP Pink salt
- 1/2 TSP Pepper
- 1 TSP Paprika
- 1 TSP Garlic Powder
- 1/2 TSP Turmeric
- 1 TSP Dried Basil
- 1 TBSP Melted Coconut or Avocado oil (use coconut for some added sweetness!)
- Preheat oven to 425
- Cut sweet potato into fry shapes
- In a large bowl, mix all ingredients until fries are evenly coated
- Transfer to a baking sheet arranging fries into one layer
- Bake for 30 minutes, turning halfway through
- For crispier fries, bake for a little longer
